HEALTHY BREAKFAST APPLE CRUMBLE
I love a recipe that can be utilised for two meals, and who doesn't want dessert for breakfast!
This is also a fantastic option for meal preparation, making 6 serves I've got your workdays covered!!
It’s super easy to make, not overly sweet (so great in the morning) and made only with easy to find healthy foods.
For the apple “filling” you will need just four ingredients:
- 3 apples – use medium-sized, sweet apples (as you can tell I’m an expert on apples)
- 1 tsp cinnamon
- 1 tsp coconut oil
- a pinch of salt
You really don’t need to add any honey or sugar to the apples, trust me.
We’ll make a simple crumble with nuts, oats and some honey:
- oats
- pecans or walnuts
- coconut oil
- honey
- a little splash of water
Chop up your apples and saute with the coconut oil, cinnamon and a tiny bit of salt in a pan at medium-high. I always cover the pan for a few minutes to help the apples soften faster. They shouldn’t get too soft, because we’re also going to bake them later
Start preheating your oven.
While the apples are cooking, use your food processor, blender or immersion blender to make the crumble. I always use my million year old food processor and it does a great job.
Spread apples in a small baking pan (make sure to spread some coconut oil on the pan or use spray oil), then use your fingers to make the crumbles and put on top of the apples.
Bake for around 15-20 minutes at 180C or until the crumble is golden brown.
Serve with some nondairy milk (or use dairy milk of yogurt if you want) and some fruit for breakfast or with a scoop of ice cream for dessert.
How you treat this apple crumble is really important if you want to enjoy it for the next few days to come.
Keep it refrigerated for up to 3 days and heat up in the oven when you want to serve it.
It’s great for a make ahead breakfast, because once you’ve baked it, it only takes around 5-10 minutes to get out, heat up and add some yogurt or milk to.
Highly recommend using the oven to reheat the apple crumble, because the crumble won’t be that crispy after a day and the oven renews that crunchy, crispy texture.
